The Best’s Great Western wines are the finestexpression of Shiraz and Cabernet that Viv Thomson produces on aregular basis. His philosophy is simple: “No vine is picked until its grownenough to be mature, no grape used unless it is in peak condition, no parcelconsidered unless it lives up to the winemakers exacting standards.”Vinification takes place in open stainless steel fermenters. The wine is matured in a combination of 1/3 newand the remainder one and two year old French and American oak barriques for 12 months. Produced fromvines incorporating the 1866 Concongella block.
