The Whisky
Overeem Port Cask Matured Cask Strength Tasmanian Single Malt Whisky is a bold, concentrated Australian single malt combining spiced dried fruit, orange marmalade and salted caramel with burnt butterscotch, candied citrus and chewy toffee. Bottled at 60% ABV, it presents Overeem’s Port cask character with considerably greater weight, warmth and viscosity than the flagship 43% Distiller Strength release. The higher strength retains more of the whisky’s aromatic oils and allows the drinker to control dilution in the glass. Maturation in casks that previously held Australian Port supplies raisins, dates, plums and concentrated confectionery sweetness. These flavours meet Overeem’s malt driven spirit, producing a dense profile of caramel, orange, fruitcake, cocoa and sweet spice. Despite its high alcohol content, the whisky is not defined by strength alone. Dark fruit and caramel provide enough weight to carry the alcohol, while orange peel, spice and oak prevent the fortified wine sweetness from becoming excessively syrupy. At full strength, the whisky is powerful, chewy and oak-forward. Carefully added water softens the alcohol and releases additional marmalade, plum, vanilla, cocoa and sweet malt.
The result is a distinctly Tasmanian cask strength whisky suited to experienced drinkers who enjoy concentrated fortified wine maturation and the freedom to determine their own preferred serving strength.
Our Tasting Notes
On the eye, deep mahogany with burnished copper, dark amber and ruby-brown highlights. Slow, substantial legs reflect its high strength and concentrated texture.
The nose opens with salted caramel, burnt butterscotch and orange marmalade. Rum-soaked raisins, dates and plum conserve emerge beside fruitcake, dark chocolate and Turkish delight. Vanilla, clove, cinnamon and polished oak develop gradually beneath the alcohol.
On the palate, it is full bodied, viscous and powerful. Spiced raisins, dates and candied orange lead into chewy caramel, toffee and butterscotch. Plum pudding, cocoa and sweet malt add depth before cinnamon, clove, liquorice and firm oak tannin provide structure.
The finish is long, sweet and warming, with caramel, candied citrus and dried fruit giving way to cocoa, baking spice, liquorice and persistent oak.
With water, the whisky becomes broader and more composed. Plum, raisins and orange move forward, caramel becomes creamier, and the sharper spice settles into vanilla, cocoa and toasted oak.
Craftsmanship & Cask Maturation
Overeem Port Cask Matured Cask Strength begins with malted barley, extended fermentation and double distillation in small copper pot stills. The resulting spirit is matured in casks previously used for Australian Port. The fortified wine absorbed into the wood contributes fruit, sweetness and colour while the oak provides tannin and spice. Although “Port cask” is widely used in whisky terminology, Port is a protected Portuguese wine designation. Australian casks of this kind previously held locally produced fortified wine made in a broadly comparable tradition.
Port casks commonly contribute:
- Raisins, sultanas and dates
- Plums and dark cherries
- Red-fruit confectionery
- Orange marmalade
- Caramel and brown sugar
- Chocolate and cocoa
- Cinnamon, clove and liquorice
- Structured wine and oak tannin
These flavours meet Overeem’s underlying distillery character:
- Sweet malt
- Honey and vanilla
- Citrus and orchard fruit
- Creamy cereal
- Baking spice
- Substantial texture
Overeem has traditionally used relatively small casks for much of its maturation programme. Smaller vessels provide greater wood contact relative to the amount of spirit, encouraging rapid extraction of flavour and colour. Earlier presentations of the Port Cask Strength release have been associated with maturation for at least five years in 100 litre French oak quarter casks that previously held Australian Port. Individual batches and packaging generations may vary, so these details should not automatically be treated as the specification for every current bottle unless stated on its label. Tasmania’s variable temperatures further increase interaction between whisky and wood. Warmer periods encourage the spirit to penetrate the oak, while cooler conditions draw it back into the cask. Rapid extraction is not equivalent to a specific number of years in Scotland. Oxidation, ester development and integration still require time, while smaller casks must be monitored carefully to prevent excessive tannin.
The 60% bottling strength preserves:
- Greater aromatic concentration
- More pronounced viscosity
- Stronger dried-fruit flavour
- More intense caramel and cocoa
- Firmer oak and spice
- A substantially longer finish
- Greater control over dilution
The Cask Strength release differs meaningfully from Overeem Port Cask Matured Distiller Strength at 43% ABV. The 43% expression emphasises softness, immediate caramel sweetness and accessibility. The 60% version delivers greater dried-fruit concentration, alcohol warmth, tannin and texture. Adding water does more than reduce the alcohol. Dilution changes the balance between volatile aroma compounds, allowing orange, plum and vanilla to become clearer while reducing the dominance of oak and spice. Water should be added gradually. Repeated small additions make it possible to observe the whisky’s development and avoid flattening its concentrated Port cask character.
