The Whisky

Overeem Sherry Cask Matured Cask Strength Tasmanian Single Malt Whisky is a concentrated Australian single malt combining dark chocolate, cocoa and burnt toffee with rum soaked raisins, stewed fruit, roasted almonds and warming spice. Bottled at 60% ABV, it presents Overeem’s sherry-cask character with substantially greater weight, viscosity and oak intensity than the 43% Distiller Strength release. The high strength retains more of the whisky’s aromatic oils while allowing the drinker to determine the final dilution in the glass. Maturation in casks previously used for sherry develops layers of raisins, plums, Christmas cake and dark chocolate. These flavours meet Overeem’s malt-driven Tasmanian spirit, producing a powerful but carefully balanced combination of fruit, cereal sweetness, nuts and spice.

The official profile begins with cocoa, charred oak and burnt toffee before rum-soaked raisins, cinnamon, almonds and fruitcake emerge. Maple syrup and caramel provide richness through the palate, while shaved almonds and oak prevent the whisky from becoming excessively sweet. At full strength, it is bold, oily and intensely spiced. Carefully added water reduces the initial alcohol heat and reveals additional chocolate, stewed fruit, vanilla and sweet malt. The result is a distinctly rich Tasmanian single malt suited to experienced whisky drinkers and those beginning to explore cask-strength releases through a familiar sherry-led flavour profile.

Our Tasting Notes

On the eye, deep mahogany with dark amber, polished copper and reddish-brown highlights. Slow, substantial legs indicate its high strength and concentrated texture.

The nose opens with cocoa powder, dark chocolate and burnt toffee. Rum soaked raisins, stewed plums and Christmas cake emerge alongside cinnamon, roasted almonds and charred oak. Vanilla, orange peel, maple syrup and sweet malt appear as the alcohol settles.

On the palate, it is full bodied, viscous and powerful. Dark chocolate, caramel and maple syrup lead into raisins, dates and stewed stone fruit. Fruitcake and malt provide sweetness before cinnamon, nutmeg, clove and shaved almonds introduce structure. Charred oak and cocoa build gradually beneath the fruit.

The finish is long, warming and gently drying, with chocolate, stewed fruit and burnt toffee giving way to charred almonds, cinnamon, cocoa and persistent oak.

With water, the whisky becomes broader and more composed. Raisins and plums move forward, chocolate becomes creamier, and the sharper char settles into vanilla, roasted nuts and sweet spice.

Craftsmanship & Cask Maturation

Overeem Sherry Cask Matured Cask Strength begins with malted barley, extended fermentation and double distillation in small copper pot stills. The new make spirit is designed to retain sufficient malt, fruit and texture for maturation in active casks. Sherry casks then build dried fruit, chocolate, nuts and spice without completely obscuring the underlying cereal character. Sherry is a family of fortified wines produced in and around Jerez in southern Spain. Different sherry styles can leave significantly different flavours in oak.

Sherry cask maturation commonly contributes:

  • Raisins, sultanas and dates
  • Plums and stewed stone fruit
  • Dark chocolate and cocoa
  • Almonds, hazelnuts and walnuts
  • Orange peel
  • Cinnamon, nutmeg and clove
  • Caramel and treacle
  • Structured, drying oak

The exact sherry style previously held by every cask in the current bottling is not declared on the official product page. It is therefore more accurate to describe the whisky as sherry cask matured than to assign Oloroso, Pedro Ximénez or another specific style to the entire release.

The fortified wine influence works with Overeem’s underlying distillery character:

  • Sweet malt
  • Honey and vanilla
  • Citrus and orchard fruit
  • Creamy cereal
  • Baking spice
  • Substantial texture

Overeem has traditionally used relatively small casks within its maturation programme. Smaller vessels provide greater wood contact relative to the amount of spirit, encouraging comparatively rapid extraction of flavour and colour. Tasmania’s variable temperatures further increase interaction between whisky and oak. Warmer periods encourage the liquid to penetrate the wood, while cooler conditions draw it back into the body of the cask. Faster extraction does not make Australian maturation equivalent to a specific number of years in Scotland. Oxidation, ester development and integration still require time, while active small casks must be monitored carefully to prevent excessive tannin.

The 60% bottling strength preserves:

  • Greater aromatic concentration
  • More pronounced viscosity
  • Stronger dried-fruit flavour
  • Deeper chocolate and cocoa
  • Firmer oak and roasted nuts
  • More intense cinnamon and nutmeg
  • A substantially longer finish
  • Greater control over dilution

The Cask Strength release differs significantly from Overeem Sherry Cask Matured Distiller Strength at 43% ABV. The 43% expression emphasises chocolate, vanilla, stewed fruit and roasted nuts in a softer format. The 60% version adds greater weight, char, alcohol warmth and spice while extending the finish. Adding water changes more than the alcohol level. Progressive dilution allows volatile aromas to escape more easily, revealing fruit and confectionery notes that can remain compressed at full strength. Water should be added gradually. Several small additions make it possible to observe the whisky’s development while avoiding excessive dilution of its chocolate, fruit and oak.

The Global Review & Score

The Whisky Company Rating: 9.1/10 (August 2026)

Overeem Sherry Cask Matured Cask Strength is an expressive high strength Tasmanian malt that combines concentrated sherry cask richness with substantial malt, spice and oak.

  • Official Profile: Overeem Whisky identifies cocoa, dark chocolate, burnt toffee, rum soaked raisins, cinnamon and almonds on the nose, followed by stewed fruit, maple syrup, caramel and fruitcake.
  • Strength: Bottling at 60% ABV preserves viscosity, aromatic concentration and a long, warming finish.
  • Cask Influence: Sherry casks provide dark fruit, chocolate, roasted nuts, caramel and sweet baking spice.
  • Distillery Character: Malt and citrus remain discernible beneath the active oak and fortified wine flavours.
  • Texture: The palate is dense and oily, with sufficient sweetness and fruit to carry the high alcohol.
  • Balance: Cocoa, char and oak provide structure against the raisins, caramel and maple sweetness.
  • Versatility: Progressive dilution allows the drinker to adjust the whisky from a powerful cask-strength presentation to a softer, fruitier style.
  • Potential Divide: Drinkers accustomed to whisky around 40–46% ABV may initially find its alcohol, charred oak and roasted nut character forceful.
  • The Verdict: A powerful Tasmanian single malt combining dark chocolate, cocoa and burnt toffee with rum-soaked raisins, stewed plums, almonds and cinnamon. Its weight and complexity reward patient nosing and careful dilution.
