This second fermentation in an autoclave creates the CO2 that is trapped in the tank and eventually dissolves into the wine resulting in a fine, but persistent bubble. The wine is left on fine lees throughout this second fermentation as well as the proceeding 50 days to preserve the wine’s delicate, grapey aromas.
